Blue cheeses
The classics are Roquefort with a sweet wine - botrytised Semillon - and Stilton with a fortified port-style wine, either vintage or tawny. A light and fruity Shiraz low in tannins is good with mild, creamy blues.

Goat's & Sheep's Cheeses
Semillon, Riesling or Cabernet Merlot all partner soft, creamy goat's cheeses. Choose restrained Chardonnay or Chardonnay Semillon blends with warm goat's cheese salad. The sharp-flavoured feta is good with aromatic Riesling. Serve a full-blown mature Shiraz with pungent Manchego and similar hard cheeses.
Soft, creamy cheeses
Choose a creamy Chardonnay for creamy Brie, a mature Cabernet Merlot to accompany a fairly ripe Camembert or Chaumes.
Hard cheeses
Choose fairly full-bodied, mature, fruity or savoury reds with softened oak/tannin - including Cabernet Merlot, Cabernet Sauvignon or a mellow Shiraz - to partner mature farmhouse Cheddar, Gloucester and Gouda as well as the pungent Parmesan and similar Spanish cheeses. Rich, full-blown Chardonnay is delicious with mature Cheddar and Parmesan. Try a spicy Shiraz with Lancashire cheese.
